Fresh Strawberry & Champagne Cocktail

Today I have a cocktail recipe to share with you. I love the combination of herbs and fruit in a cocktail. I had a stock of strawberries in the fridge that were begging me to make something delicious out of them, and the thyme adds a bit of dimension to it (plus let’s be honest, it makes your drink look uber classy).

I named this drink Holly Golightly because it reminds me of something that Audrey’s infamous character from Breakfast at Tiffany’s would drink.It’s doesn’t take long to throw together and all you need is couple of easy to come by ingredients.

Here’s what you’ll need:

Fresh Thyme

Champagne

Strawberry Simple Syrup (see the end of the post for the simple syrup recipe)DSC_0282

This is the kind of drink that you need to make glass by glass. But to me it’s worth it because each glass comes out looking so lovely.

Here’s what you do:

  • Pour champagne into each glass
  • Add a splash of strawberry simple syrup
  • Put a few sprigs of fresh thyme in eachDSC_0309

DSC_0241For the simple syrup:

Put 1 cup of strawberries, 1 cup of water, and one cup of sugar in a pot. Bring it to a boil, then let it simmer for 20-25 minutes. Let it chill, and you’ve got strawberry syrup!
