Heart Shaped Eggs in a Basket

Hello everyone! I hope you’re all doing well. Valentine’s Day is right around the corner and today I thought that I would share a festive breakfast recipe that you can make for yourself, your family, or your significant other!

This dish has many names but I know it as eggs in a basket. It’s a really quick and easy meal for breakfast but it’s a little more interesting than my usual bowl of oatmeal. So let’s dive right in!

Here’s what you’ll need:DSC_0217

*you can substitute the bread for whatever type you prefer and you can also use butter instead of coconut oil

1. First cut out a heart in your bread and put your pan on a low heat.DSC_0231

2. Cover both sides of your bread in oil and toast the bread on both sides for about 1-2 minutes in the pan. That way the bread gets nice and toasted without having to overcook the eggs.DSC_0233

3. Crack your eggs and drop them into the bread. Let each side cook until the clear portion of the egg has turned white, but no longer because you still want the yolk to be runny.DSC_0238

4. Plate it, sprinkle your dish with salt & pepper to taste, and enjoy!DSC_0241
